Ingredients
2 tbsp. extra-virgin olive oil or ghee
1 yellow onion, chopped
2 medium carrots, chopped
3 cloves garlic, grated or finely chopped
2 tbsp. tomato paste
2 tsp. chili powder
2 tsp. paprika
1 tsp. ground cumin
1 tsp. (or more) kosher salt
1/2 tsp. (or more) freshly ground black pepper
4 c. chicken or vegetable broth
1 c. dried brown lentils, rinsed, drained
Chopped fresh parsley, for serving
Instructions
1. In a large pot over medium heat, heat oil. Cook onions and carrots, stirring occasionally, until softened, 8 to 10 minutes. Add garlic and cook, stirring, until fragrant, about 1 minute more.
2. Add tomato paste and cook, stirring frequently, until brick red, 1 to 2 minutes. Add chili powder, paprika, cumin, salt, and pepper and cook, stirring frequently, until warmed through and fragrant, about 30 seconds.
3. Add broth and lentils and stir to combine; season with salt and pepper, if needed. Bring to a boil, then reduce heat to low. Cover and simmer until slightly thickened and flavors have melded, 35 to 40 minutes. Let cool slightly.
4. Divide soup among bowls. Top with parsley.
